Bagel Egg Strata

You need to allow 4-24 hours for it to sit in the fridge before baking.

1/4 C. butter or margarine, melted
8 C. plain bagels cut into bite size pieces (approx. 6 bagels)
1 pkg. of Jimmy Dean reduced fat sausage
8 oz. Swizz cheese (shredded or torn up)
8 eggs, beaten
2 C. milk
1 C. cottage cheese

Cook sausage and set aside.
Place melted butter in a 3-quart rectangular baking dish, spreading to cover the bottom. Spread bagel pieces evenly in prepared dish.
Sprinkle sausage and Swizz cheese evenly over bagel pieces.
In a large bowl, combine eggs, milk, and cottage cheese. Pour over layers in dish.
Press down gently using the back of a wooden spoon to moisten all the ingredients. (I like to smoosh it all together with my fingers so the cottage cheese, sausage, and cheese aren't just sitting on the top of the bagels.)
Cover and chill in the refrigerator for 4 to 24 hours.

Preheat oven to 350 degrees. Bake, uncovered, about 45 minutes to 1 hour or until set and edges are puffed and golden. Let stand for 10 minutes before serving.
Makes 12 servings.

Chantal made this for Baby Lucy's Blessing Brunch. It was very delicious, I had to have the recipe!! Instead of layering the ingredients in the pan, I just mixed everything in a large bowl then poured in into the baking dish. Worked out great!

Grandma's Crepes


1c. rounded Pancake Mix
1 1/2c. Flour
2 Eggs
2 TB Oil
4c. Water

Toppings, we like:
Raspberry pie filling (or see red raspberry sauce in recipes)roll inside
Peach Pie filling (mash with a potato masher to break up peach slices)roil inside
whip topping
powdered sugar
any type of jam will work also

Whip together all ingredients with mixer. Add a little water if to stiff, you want it watery enough to coat the pan easily. It is easiest for me to use two pans and flip the crepe from one pan to the other, rather than trying to use a spatula to flip it in the same pan. So, heat a little oil in your 1st pan. Pour about 1/3c. of batter into center of pan and roll pan around to spread batter out into a large thin circle. When you see bubbles form them flip crepe onto the other pan. Allow other side to cook and then slide onto serving dish. Finish with desired toppings and enjoy!!

German Pancakes


1 stick butter
9 eggs
1 1/2c. flour
1 1/2c. milk
Dash of salt

Place eggs in a bowl and cover with super hot water, let stand. Heat oven to 425F. Place butter in 9x13 pan and put in oven to melt. Mix flour milk and salt together. Drain water from eggs. Beat eggs on high into flour and milk mixture. Pour mixture into melted butter, return to oven and bake for about 20 mins.

Will be very puffy and raised on sides. Once removed from oven the sides will deflate. Sprinkle with powdered sugar. Cut into serving pieces. Individuals can drizzle own portions with maple syrup.

These are a Birthday Tradition! Young Men's Quorum's have awaken and braved the cold for these at 6am in the morning, Yep they are that good!!!
