Eclair Pie


1c. Water
1/2 c. Butter
1 c. Flour
4 Eggs

Filling:
2 small pkg. White Chocolate Pudding
3 c. Milk
1 pkg. (8oz.)Cream Cheese
1 sm tub Cool Whip

In med. sauce pan bring water to a boil, remove from heat and mix in flour, beat until smooth. Add 1 egg at a time beating until smooth after each one. Prepare Cookie sheet with cooking spray and then spread dough evenly as you can. Bake at 400F for about 25 mins until puffy and lite golden. Let cool.

For filling whisk together milk and pudding chill until set. In a bowl beat cream cheese until smooth then gradually add pudding. Spread mixture evenly over eclair crust then smooth the cool whip evenly over pudding layer. Drizzle with chocolate syrup and lightly cut through cool whip and chocolate layer to create design. Chill until ready to serve.

This is a very light dessert. I like to serve it with the chocolate syrup and also Raspberry sauce on the side and let everyone add what they want. Delicious!!!

Swiss Chicken


7-8 Chicken Breast, cut into bite size pieces
1 lg lemon
Salt, Pepper, Garlic
1 lb Swiss Cheese slices approx. 10-12
2-3 cans Cream of chicken soup or 1 lg Family size can
1 c. Butter, melted
3c. Cubed Seasoned Stuffing (Mrs. Cubisons)

Layer Chicken pieces in bottom of 9x13 pan. Squeeze lemon juice evenly over chicken and lightly season. Layer sliced swiss cheese evenly over chicken try to arrange cheese to cover any large swiss holes. Next smooth condensed soup evenly over cheese. Do Not dilute soup. In a bowl combine melted butter and dry cubed stuffing til butter is absorbed. Arrange evenly over soup. Cover with foil and bake at 350F for 1 hour then uncover and continue to bake 30mins more to brown stuffing. Serve with Mashed potatoes.

This recipe is another one of Chantal Tom's Great ones!! In her family it is called Farkel Chicken, its a family nickname or an actual uncle I can't quit remember. Try this one you will love it!

Steak and Everything Sandwiches


2 lbs Deli sliced Roast Beef
2-3 bell peppers I prefer red and yellow, core and slice
1 pkg sliced mushrooms
1 med onion, sliced
Salt, Garlic, Pepper and Italian seasoning to taste
Parmesan cheese
Sliced Provolone Cheese
Cibatta Bread (Costco) or Sandwich buns about 6-8
or Bidotes work well from the Mexican market

Sauté vegetables on med high heat in a little olive oil, season. Put in a large bowl sprinkle with parmesan and set aside. Slice Roast beef into strips approx. (2in x 1/2in), also sauté on med high heat, season but do not add any salt to beef and only cook enough to heat the meat through, since it is already cooked. Mix meat and vegetables together add a little more parmesan.

To prepare sandwiches cut loaves in half and spread lightly with mayonnaise, place a slice of cheese on one side then add a lg. spoonful of meat and veg. mixture. Wrap sandwich in foil and put in oven at 300 for approx 15-20mins. Bread will be heated through and cheese melted- Excellent!!!! Anthony’s All Time Favorite!

Navajo Tacos


To make fry bread:
Purchase French bread dough form Albertsons (or make your own). Cut each loaf into about 6 pieces. Use a floured surface and roll and stretch each piece to the size of a small plate. Fry in hot oil turning once until light golden. Set aside and let cool.

Taco meat:
5c chicken, cooked and shredded (also great for left over turkey)
½ med onion , chopped
½ med bell pepper, chopped
Salt, Pepper and Garlic to taste
1 Tb. Chili powder
4 Tb. Worcestershire Sauce
2c. Salsa
1/2c. brown sugar
1 small can tomato sauce
Sauté onion, pepper and chicken, spice and add salsa sugar and sauce, let simmer.

Serve tacos with pinto beans meat mixture and toppings which can include: shredded lettuce, shredded cheese, diced tomatoes, sliced green onion, diced fresh tomatoes, salsa, sour cream, diced avocado or guacamole. How ever fancy or simple you want to get. Great for a family get together!

Flour Tortillas


4c. flour
1 tsp salt
11/2 tsp baking powder
5 tb. Shortening
2 c hot water

In a bowl mix all dry ingredients. Cut in shortening until crumbly looking. Add the water and mix until dough is gathered in a soft ball. Let dough rest 10-15 mins. Divide dough into golf ball size portions coat with flour and cover with plastic, set aside. Roll each ball into a round on a floured surface, about the size of a med. Plate. Cook on a dry skillet over medium heat turning once, until light golden spots form.

This recipe comes from my mom Gloria Dixon. She makes them without using a recipe and they are heaven!!! Sadly I have yet to perfect my tortilla making skills.

Hot Clam Dip



2 8oz pkg. cream cheese
2 6oz. cans minced clams (drain only 1 use the other with juice)
½ bunch fresh parsley
1 tsp. garlic
20 shakes of Tabasco Hot Sauce, or Cholula, Tapatio
2 loaves Pazano bread (Kneaders)

Cut the top off of one loaf like you would when carving a pumpkin. Then scoop out middle to create a bread bowl. Cut the 2nd loaf into chunks for dipping.

Combine ingredients and pour into bread bowl, wrap really good in foil and bake at 350 for 2 hrs. The presentation of dip in bread bowl is great but I have also baked the clam mixture in an oven safe baking bowl and then just cut up bread for dipping. Delicious!!

This recipe comes from Chantal Tom. I love this and request it often at our get- togethers.

Tuna Casserole

1/2 bag wide egg noodles, cook and drain approx 3-4 cups
4 tb butter
¼ c. chopped onion
¼ c. flour
Salt, pepper, garlic
2 1/2 c. milk
1c. frozen peas
3 cans tuna, drained
Parmesan cheese
1 sleeve Ritz crackers, crush while in wrapper

In sauce pan melt butter and sauté onion and sprinkle with salt, pepper and garlic. Add flour stir and cook ‘til browned (make a rue). Whisk in milk and stir occasionally ‘til thickened. Add peas and tuna, then mix with noodles and spoon into a 9x13pan. Sprinkle with parmesan, then with crushed crackers. Bake in oven at 350 for 20mins.

This is another Aunt Linda favorite. However she didn't make a rue but I liked a thicker sauce. Mahonri loves this shouts with glee when I make it for dinner.

Sloppy Joe's


2lb. Hamburger
1/3 c chopped onion
Sprinkle with Salt, pepper, garlic, chili powder
1 can chicken gumbo soup
1c. ketchup
Squirt mustard
1/2c. brown sugar

Brown meat and drain grease, sauté with onion and seasonings add remaining ingredients and let simmer 10 mins.

This recipe is from Aunt Linda and are the ONLY Sloppy Joe's our family will eat!!!

Spicy Ranch Chicken

1 10lb bag Chicken leg quarters, cut leg from thighs approx. 20 pcs
Italian Bread crumbs
1 envelope dry ranch dressing mix
1 stick butter, melted
Chochula Hot sauce my favorite (can also use Tapatio or Tabasco)

Coat chicken with bread crumbs and place in baking sheet. Sprinkle chicken with ranch mix, then with melted butter and finally with the hot sauce. Bake at 350 for 1 ½ hour. Depending on your tolerance use more or less hot sauce, or none at all if you prefer.

This recipe was adapted from the spicy chicken wings my Uncle Juan and Aunt Edna made at a family gathering years ago. My husband liked them so much but wanted me to use legs and thighs instead. I coated the larger pieces of chicken in breadcrumbs first to cut down the amount of ranch mix I would need. They turned out GREAT and to this day it is one of Kulesa's favorite dinners. I usually serve this with white rice and a steamed broccoli.

Fudge Jumbles (Bar Cookie)


Chocolate Ribbon:
14oz sweetened condensed milk
12 oz milk choc. Chips
2 tsp vanilla
3 tb. Butter melted

Cookie Dough:
1 c butter, softened
2 c sugar
2 eggs
1 tsp vanilla
2 ½ c flour
1 tsp baking soda
½ tsp salt
3 c oatmeal

Make Dough first, press ¾ of dough into a 9x13 pan. Then make choc. Ribbon mixture, spread evenly over dough. Drop spoonfuls of remaining cookie dough over choc ribbon mixture, press into choc. Bake at 350 for 25mins, cool before cutting.

Pineapple Pie Dessert

1 yellow cake mix
2 eggs
1/2c. oil

1 lg pkg vanilla pudding ,mix with milk then chill
2 1/2 c milk

1 can Pineapple tidbits, drain juice
1 8oz tub cool whip

Mix first three ing. And press into bottom of 9x13 pan Bake 350 for approx 15-20 mins or until golden brown do not over bake or crust will be hard. Let cool. Sprinkle pineapple over cooled crust spread pudding evenly over pineapple, then spread cool whip over pudding. Chill until ready to serve.

Chicken and Rice Casserole

1 1/2c. rice
3c. water
1 1/2c. shredded cheese
4-5 Chicken Breast cut into chunks or De-bone 1 rotisserie chicken
1 envelope Onion soup mix
2 cans Cream of Chicken Soup or 1 Lg family size can
1 1/2c. shredded cheese

Combine rice and water in bottom of a 9x13 pan. Sprinkle evenly with cheese. Layer chicken over cheese then sprinkle with onion soup mix. Last try to evenly space spoonfuls of condensed soup over the chicken. Cover and bake 350 for 2 hours
Uncover and sprinkle with shredded cheese. Bake 10 more mins. until cheese is melted.

Guava Pineapple Punch


2 lg can Pineapple Juice
2 carton Guava Juice + fill 1 carton again to 1/2 with water
1 1/2c. Country Time LemonadePowder
1 1/2c. Sugar
1-2: 2Lt Lemon Lime Soda

If possible keep all ingredients cold before assembly. Then combine Juices and water with lemonade powder and sugar, stir to dissolve then slowly add Soda. This fills a large punch bowl.

If using a 5gal Spout Container
3 cans Pineapple
3 cartons Guava Nectar + Fill 1 carton full of water
2 1/2c. Country Time Lemonade Powder
2 c. Sugar
2-3: 2Lt Lemon Lime Soda

Teriyaki Chicken

2 10lb bags of Chicken Leg Quarters (cut leg away from thigh) approx.40 pcs.

Marinade:
1.25 Qt or 4 c. Soy Sauce
3 bags DARK Brown Sugar
1 bag Green Onions, chopped
1/3-1/2 c. minced garlic
Fresh Ginger bulbs to equal the size of your hand or a little bigger, peel and chop

Combine all marinade ingredients. Add Chicken pieces and stir to coat all pieces, keep in fridge for approx. 2-3 days. I like to cook this in a large turkey roaster. Bake chicken with marinade at 350 for about 2 hrs til meat falls off the bone. Serve with white rice.

This Chicken is a favorite by all who try it!!! However if you would like to take it to the next level, Do not cook till meat falls off bones, cook till just done and then Grill before serving. The chicken skin gets nice and crispy, absolutely delicious!!!!

German Pancakes


1 stick butter
9 eggs
1 1/2c. flour
1 1/2c. milk
Dash of salt

Place eggs in a bowl and cover with super hot water, let stand. Heat oven to 425F. Place butter in 9x13 pan and put in oven to melt. Mix flour milk and salt together. Drain water from eggs. Beat eggs on high into flour and milk mixture. Pour mixture into melted butter, return to oven and bake for about 20 mins.

Will be very puffy and raised on sides. Once removed from oven the sides will deflate. Sprinkle with powdered sugar. Cut into serving pieces. Individuals can drizzle own portions with maple syrup.

These are a Birthday Tradition! Young Men's Quorum's have awaken and braved the cold for these at 6am in the morning, Yep they are that good!!!

Yummy Yam Casserole


4 lg Yams Cooked skins removed and mashed
½ c. butter must be real no marg.
1 c. sugar
2 eggs
1/4c. milk
1 tb. Vanilla
Mix all ingredients and then spoon into a 9x13 pan

Top yam mixture with:
1/2c. flour
11/2c. brown sugar
1 1/2c. chopped pecans
3/4c. butter (1 ½ sticks)

Bake at 350 for 30-45mins. Until top is browned.

This is a Thanksgiving and Christmas MUST!!!
My best friend Chantal Tom gave me this recipe years ago and Iv'e been making it ever since! Everyone that tries it absolutely loves them even those who don't normally like yams. It's practically a dessert.

Oatmeal Peanut Butter Bars


1c. Butter
1c. Sugar
1c. Brown sugar
2 Eggs
3/4c. Peanut Butter
1 tsp. Vanilla
1 tsp. Baking Soda
½ tsp. Salt
2c. Flour
2c. Oatmeal
Top with 1c. Peanut butter and 1 can Fudge Frosting
Mix above ingredients, Spread evenly on a jelly roll cookie sheet. Bake 350 for 12-15 min. until slightly golden. If you over cook they will be hard and crumbly. While still hot spread melted peanut butter on top let cool then spread fudge frosting.

These are an all time favorite at our annual 4th of July Picnic and everyone knows Emily Dixon makes them BEST!

Pampered Chef Chicken & Broccoli Braid


Ingredients:
2 cups cooked chicken, chopped
1 cup broccoli, chopped
1/2 cup red bell pepper, chopped
1 garlic clove, pressed
4 oz. (1cup) sharp cheddar cheese, shredded
1/2 cup mayonnaise
2 tsp. all-purpose dill mix
1/4 tsp. salt
2 pkgs. (8oz. each) refrigerated crescent rolls
1 egg white, lightly beaten
2 tbls. slivered almonds

Directions:
Preheat oven to 375F. Chop chicken and broccoli using food chopper; place in 2 qt. batter bowl. Chop bell pepper using 5" utility knife; add to batter bowl. Press garlic over vegetable mixture using garlic press. Shred cheese using cheese grater and add to vegetable mixture; mix gently. Add mayonnaise, dill mix, and salt; mix well using scraper. Unroll 1 package of crescent dough; do not separate. Arrange longest sides of dough across width of 12" x 15" rectangle baking stone. Repeat with remaining package of dough. Using roller, roll dough to seal perforations. On longest sides of baking stone, cut dough into strips 1 1/2 inches apart, 3 inches deep using a pizza cutter (there will be 6 inches in the center for the filling). Spread filling evenly over middle of dough. To braid, lift strips of dough across mixture to meet in center, twisting each strip on turn. Continue alternating strips to form a braid. Tuck ends under to seal at end of braid. Brush egg white over dough using pastry brush. Sprinkle with almonds. Bake 25-28 minutes or until deep golden brown.
Substitute 1 tsp. dried dill weed for The Pampered Chef Pantry All-Purpose Dill Mix, if desired. Yield: 10 servings

Awesome Carmel Popcorn Balls


1 bag microwave popcorn
1 stick of real butter
1/2 cup brown sugar
1 cup mini marshmallows (heaping)
or 10 reg. sized

Pop popcorn as usual and remove any
un-popped kernels. Melt butter, sugar and
marshmallows in sauce pan. Bring to a
boil then quickly pour over popcorn and
mix to coat evenly. These are so addicting! ENJOY!!!

Andes Mint Cookies


1 Chocolate cake Mix
2 eggs
1/2 cup oil
Approx. 1 1/2 pkg. Andes Mints (1 mint per cookie)

Mix together cake mix, eggs and oil. Dough will be very thick.
Using a small cookie scoop or tsp. Place balls of dough on a cookie
sheet. Bake at 350 for 10-12 min. Leave cookies on the baking sheet,
immediately place one Andes mint on each cookie. Allow chocolate
to melt then using a butter knife spread the chocolate to evenly coat
the top of each cookie. Now remove cookies to a sheet of wax paper
where they can cool. The chocolate will again harden. Delicious!

Blender Salsa


1 lg. can diced tomatoes
1 serrano pepper or jalapeno, sliced
½ med onion, chopped
Salt, pepper and garlic to taste
2tsp lemon juice

Blend all ingredients together. Pulse a few times for more chunky style or longer for smoother sauce.
